Arròs negre
Ingredients:
400 g rice,
500 g baby squid,
1 red pepper,
1 bare tomato,
2 branches of parsley,
5 garlic,
1 litre fish broth,
Olive oil,
salt.
Preparation: Crush the tomato, the pepper, the garlic and the parsley. Fry it in a frying pan. When it is ready, add the baby squid with ink, and just then add the rice to fry for 5 minutes. You must be removing it all the time. Add the fish broth and cook it for about 20 minutes. Decorate it with a bit of parsley. You can also clean the baby squids, (as it is described below), adding the ink when the rice is already fried.
